Lemon Drizzle Cake



80 grams softened butter
3/4 cup castor sugar
2 eggs
zest of 2 lemons
1 1/2 cup self raising flour
1/3 cup of milk

juice of 1 large or 2 small lemons
4 tablespoons of castor sugar


Set oven at 180 degrees.

Cream the butter, sugar, zest and eggs in large mixing bowl. Stir in flour and milk alternately one half at a time. tip mixture into a greased and lined cake tin. Place tin in oven and bake for 40-45 minutes or until sharp knife comes out clean. Remove cake from oven and allow to cool in tin. place lemon juice in large saucepan on medium heat for 3 minutes before slowly adding the castor sugar. Stir until sugar is dissolved. Pour lemon and sugar mix (still hot) into cake tin evenly and allow to cool once more before removing it from the tin.
