Ingredients:
Enchiladas:
2 cloves of crushed garlic
1 diced white onion
2 large red capsicums
5 small seeded red chillies
5 small seeded green chillies
3 soft tomatoes
1/2 cup of water
1 cup of tomato puree
12 burritos
2 cups cheddar cheese
2 cups mozzarella cheese
Salsa:
3 diced firm tomatoes
1 large seeded red chili
1 small diced cucumber
1 small red salad onion
lime juice
pinch of salt
pinch of pepper
Guacamole:
2 large avocados
1 clove of garlic
1 diced tomato
4 spring onion leaves
juice of 1 lime
pinch of salt
pinch of pepper
Salad:
rocket leaves
2 tbls balsamic vinegar
parmesan cheese
roughly chopped capsicum, chillies and soft tomatoes ready for the pot. |
strained sauce. |
burritos dipped and fried in sauce. |
uncooked enchiladas with left over cheese and sauce sprinkled on top. |
seasoned guacamole and spring onion. |
dressed rocket salad. |
complete meal. |
